How Long Does Ham Last?

Ham is the cured hind leg of pork. Most supermarket hams are fully cooked, either whole, half or spiral-sliced, while fresh ham is uncured raw pork and country ham is dry-cured and very salty. Salt and nitrite slow spoilage somewhat, but ordinary cooked ham is moist enough that Listeria and spoilage bacteria still grow in the fridge.
How to store ham
- After a holiday meal, carve the remaining meat off the bone within 2 hours, and refrigerate it in shallow containers or wrapped portions.
- Freeze leftovers in the sizes you cook with: a bag of diced ham for omelets and soup, slices for sandwiches, and the bone on its own for beans or split pea soup.
- Wrap the cut face of a half ham tightly in plastic wrap or foil; the exposed surface dries out and picks up fridge odors first.
- Canned hams marked keep refrigerated belong in the fridge even unopened. Only cans labeled shelf-stable can be stored in the pantry.
- Expect frozen ham to come out a little wetter and spongier after thawing; it is better in cooked dishes than on a platter.
How to tell if ham has gone bad
- A slimy or sticky film on slices. This is the most common sign on spiral-cut ham.
- A sour, sulfur or yeasty smell in place of the usual smoky, salty aroma.
- Rosy pink fading to gray, brown or green. A shimmering rainbow sheen on its own is a harmless light effect on cured meat.
- Mold on ordinary cooked ham means discard it. Only dry-cured country hams can have surface mold scrubbed off.
Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.
