How Long Does Prosciutto Last?
Sliced prosciutto lasts 3–5 days in the fridge after opening or deli slicing, and is best within 2–3. An unopened vacuum pack keeps 2–3 months, or until its date if sooner.

Prosciutto is a whole pork leg that is salted and air-dried for a year or more and eaten uncooked in paper-thin slices. The long cure removes enough water that a whole leg is stable for months, but the delicate slices have a huge surface area, and once they meet air they dry out, oxidize and lose their sweetness within days.
How to store prosciutto
- Keep deli-sliced prosciutto in its interleaving paper, then wrap the whole parcel tightly in plastic wrap. The paper stops the slices from fusing together, and the wrap keeps air out.
- Buy it sliced on the day you plan to serve it whenever possible, and ask for it laid flat in a single layer rather than piled.
- For a chunk, rub the cut face with a drop of olive oil, press plastic wrap against it and wrap the rest in paper. Shave off and discard the dried first slice before serving.
- Take prosciutto out of the fridge 15–20 minutes before serving so the fat softens, but do not leave a platter out longer than 2 hours.
- Freeze it only for cooking. Thawed slices tear and lose their silky texture, but are fine crisped in a pan or wrapped around chicken or asparagus.
How to tell if prosciutto has gone bad
- A sour, rancid or sharply pungent smell in place of the sweet, nutty, lightly porky aroma.
- Slices turning from rosy pink to brown or gray, with fat that has gone from white to yellow.
- A wet, slimy or sticky surface. Properly kept prosciutto feels dry and silky.
- Green, blue or black mold on slices. Small hard white specks inside the meat are tyrosine crystals from long aging and are harmless.

Can prosciutto be left out overnight?
Sliced prosciutto should not be left out overnight. Although it is cured, sliced prosciutto is sold refrigerated and should follow the 2-hour rule once it is on a board. Slices that sat out all evening will also have dried and oxidized, so there is little worth saving.
Can you freeze prosciutto?
You can, for about 1 month, but it is not ideal. Cured ham does not freeze as well as fresh meat, because salt speeds up rancidity in the fat even at freezer temperature. Separate slices with parchment, wrap tightly, thaw in the fridge and use the prosciutto in cooked dishes.
