Pork shoulder, sold as Boston butt or picnic roast, is a big, fatty, collagen-rich cut that is slow-roasted, braised or smoked, most often for pulled pork. Raw, it keeps like other whole pork cuts. Its weight, often 6–9 pounds, makes slow thawing and slow cooling the things to plan around.

  • A sour or rotten-egg smell that stays after a cryovac pack has been open and the meat rinsed of purge for several minutes.
  • Tacky, slimy skin or fat cap, or gray-green meat.
  • Yellowed fat with a sharp, paint-like rancid smell, typical of shoulder kept frozen too long.
  • Cooked pork that smells sour, feels slick or has any mold.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Is pork butt the same as pork shoulder, and do they keep the same?

Yes, they keep the same. Pork butt, or Boston butt, is the upper part of the shoulder and picnic roast is the lower part; both are sold as pork shoulder. Either lasts 3–5 days raw in the fridge and 4–6 months in the freezer.

Can I cook a pork shoulder that has been in the fridge for a week?

Not if it has been opened or was tray-wrapped; that is beyond the 3–5 day limit and it should be discarded. The one exception is a factory-sealed cryovac shoulder that is still within its printed use-by date. Long cooking kills bacteria but does not destroy every toxin they leave behind.

Is it safe to cook pork shoulder overnight in a slow cooker or smoker?

Yes, as long as the cooker holds a safe temperature. Start with thawed meat, keep a smoker at 225°F (107°C) or higher, and do not let the finished pork sit below 140°F (60°C) for more than 2 hours. Shoulder is safe to eat at 145°F but needs around 195–205°F to shred.

How long does leftover pulled pork shoulder last?

Leftover pulled pork lasts 3–4 days in the fridge and 2–3 months in the freezer. Barbecue sauce and smoke do not extend this. Reheat it to 165°F (74°C), adding a splash of broth or apple juice to keep it from drying.
