Imitation crab is surimi: white fish, usually Alaska pollock, that is minced, washed, blended with starch, egg white, sugar and crab flavoring, then shaped and fully cooked. Sealed packs are pasteurized, which gives them a long refrigerated life, but once opened the moist, ready-to-eat sticks are exposed to bacteria and keep only a few days.

  • A sour or distinctly fishy smell. Fresh imitation crab smells mild and slightly sweet.
  • A slimy, sticky film on the surface, or sticks that have become mushy and fall apart.
  • The white flesh turning gray or yellowish, or the red-orange outer color looking faded and blotchy.
  • A sealed pack that is puffed up with gas or leaking should be discarded unopened.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.
