Lobster is sold live, as raw frozen tails, or as cooked meat. It is kept alive until cooking because the moment a lobster dies, enzymes from its digestive gland begin to break the flesh down into mush and bacteria multiply rapidly. Once cooked, the meat behaves like any other cooked seafood and keeps a few days under refrigeration.
How to store lobster
- Keep live lobsters in the back of the fridge in an open box or paper bag, covered with damp newspaper or seaweed from the fish market. Leave the claw bands on.
- Never put live lobsters in tap water or on direct ice that melts into fresh water. Fresh water kills a saltwater animal quickly.
- If you cannot cook live lobsters within a day, cook them anyway, then pick the meat and refrigerate or freeze it. Cooked meat keeps far better than a weakening live lobster.
- Freeze cooked lobster meat in a rigid container covered with a light brine or milk, leaving headspace; bare meat turns tough and stringy in the freezer.
- Thaw frozen raw tails overnight in the fridge, not in warm water, and cook them the day they finish thawing for the firmest texture.
How to tell if lobster has gone bad
- A live lobster that hangs limp with a drooping tail and claws and does not curl its tail when picked up is dying or dead.
- An ammonia smell from raw or cooked meat, sometimes noticeable only after cooking.
- Cooked meat with the texture of cottage cheese, soft, crumbly or mushy, which means the lobster was dead too long before cooking.
- Meat that is slimy, or discolored gray, green or yellowish rather than white with red-orange skin.
