How Long Does Crab Last?

Cooked crab, including thawed crab legs and fresh crab meat, lasts 3–4 days in the fridge and 2–3 months in the freezer. Live crabs should be cooked within 1 day.

Crab reaches most kitchens already cooked: king and snow crab legs are boiled and frozen at sea, and picked crab meat is sold fresh or pasteurized in tubs. Live blue and Dungeness crabs are the exception. Crab meat is moist, low in acid and handled a great deal during picking, so once thawed or opened it spoils within a few days.

How to tell if crab has gone bad

  • A sour, sharp or ammonia odor. Good crab smells sweet and lightly briny.
  • Meat that is slimy, sticky or has turned yellowish, gray or bluish instead of white with red-orange edges.
  • A bitter or sour taste; spit it out and discard the rest.
  • A live crab that is limp, does not move its legs when handled, or already smells has died and should not be cooked.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Thawed crab legs last 1–2 days at their best and should be eaten within 3–4 days of thawing at the outside, since they are already cooked. Legs bought thawed from a seafood case have used some of that time, so ask when they were thawed, or buy them frozen.

How long can live crabs stay in the refrigerator?

Live crabs should be cooked within 1 day, ideally the day you buy them. Keep them cool, damp and able to breathe. A crab that dies before cooking deteriorates extremely fast because its digestive enzymes and bacteria spread into the meat, so dead uncooked crabs are discarded, not cooked.

How long does pasteurized crab meat last?

An unopened tub of pasteurized crab meat keeps in the fridge until the use-by date printed on it, often several months from packing. Once the lid is off, treat it like fresh crab meat and use it within 3–4 days. It must be refrigerated at all times.

Can you freeze cooked crab?

Yes, cooked crab freezes for 2–3 months at best quality. It keeps best in the shell or, for picked meat, packed tightly in a freezer container and covered with a little milk or light brine to prevent the meat from drying out and turning stringy.

Is the yellow stuff inside a crab safe to eat?

The yellow-green 'mustard' is the crab's hepatopancreas, a digestive organ, not fat or spoilage. It is a delicacy to some, but it is also where environmental contaminants concentrate, and some state health agencies advise not eating it. It has no bearing on whether the crab meat is fresh.
