Oat milk is made by blending oats with water and using enzymes to break the starch into natural sugars, which gives it a mild sweetness and creamy body. It is sold both chilled and in shelf-stable cartons. The sugars and starch make it a welcoming medium for microbes after opening, and spoiled oat milk tends to turn thick and slimy.

How to store oat milk

How to tell if oat milk has gone bad

  • A thick, slimy, stringy or gel-like pour, the most typical sign of spoiled oat milk.
  • A sour, yeasty or fermented smell in place of a mild oaty sweetness.
  • A swollen carton or a hiss of gas when the cap is opened.
  • A yellowish or grayish color change, sour taste, or mold around the spout.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Frequently asked questions

How long is oat milk good for after opening?

Oat milk is good for 7–10 days after opening when kept at 40°F (4°C) or colder, which is what most brands print on the carton. Some barista versions list a shorter window, so check the label. Writing the opening date on the carton helps.

Why is my oat milk slimy?

Sliminess in store-bought oat milk usually means it has spoiled, because bacteria are breaking down its starches and sugars, and it should be thrown out. In homemade oat milk, a slimy texture straight after blending comes from over-blending or warm water releasing oat starch, which is a texture flaw rather than spoilage.

Does unopened oat milk go bad?

Yes, eventually. Shelf-stable oat milk is good in the pantry until its best-by date, generally 6–12 months from production, and often somewhat beyond if the carton is intact. Refrigerated oat milk has a much shorter life. Never use a carton that is bulging, leaking or hisses when opened.

Can oat milk be frozen?

Freezing is safe but not recommended for drinking or for coffee. Thawed oat milk separates into a watery layer and grainy sediment and loses its creaminess. Frozen in cubes, it is acceptable for smoothies, overnight oats, soups and baking, ideally within about 3 months.
