How Long Does Soy Milk Last?
Opened soy milk lasts 7–10 days in the fridge. Unopened shelf-stable cartons keep in the pantry until their printed date. Fresh or homemade soy milk should be used within 3–4 days.

Soy milk is made by soaking, grinding and cooking soybeans in water, then straining out the pulp. It has about as much protein as cow's milk, and that protein-rich, low-acid liquid spoils in a very similar way once opened: it sours, thickens and curdles. Fresh soy milk from Asian grocers or tofu shops keeps far less time than carton brands.
How to store soy milk
- Refrigerate the carton promptly after each use and keep the cap clean, as dried soy milk on the spout sours first.
- Cool homemade soy milk quickly after boiling by setting the pot in cold water, then bottle it in clean jars and refrigerate within 2 hours.
- Stock shelf-stable cartons in a cool, dry cupboard and rotate them so the oldest date gets used first.
- Warm soy milk gently for coffee or tea. Curdling in hot, acidic coffee is a reaction of the soy protein and not proof the milk is spoiled.
How to tell if soy milk has gone bad
- A sour, beany-gone-rancid or rotten smell when the carton is opened.
- Thick, lumpy or curdled texture in the carton itself, as opposed to curdling only once it hits hot coffee.
- A puffed-up carton, or fizzing and a sour, bitter taste.
- Sliminess on the pour, or mold on the spout or the surface.

Why does soy milk curdle in coffee?
Soy protein coagulates when it meets heat and acid together, which is the same principle used to make tofu. Hot, acidic coffee can therefore curdle perfectly fresh soy milk. Letting the coffee cool slightly, or pouring the soy milk in first and warming it gradually, reduces the effect. Curdling inside the cold carton does mean spoilage.
Does shelf-stable soy milk need to be refrigerated before opening?
No. Aseptic cartons sold on the grocery shelf are ultra-heat-treated and sealed, so they are safe in the pantry until the best-by date. Chill one before drinking if you prefer it cold. After opening, refrigerate it and use it within 7–10 days.
Can you freeze soy milk?
