How Long Does Pasta Salad Last?
Pasta salad lasts 3–4 days in the fridge, whether it is dressed with mayonnaise or vinaigrette. Do not leave it out more than 2 hours, and do not freeze it.

Pasta salad is cooked, cooled pasta tossed with an oil-and-vinegar or mayonnaise dressing and add-ins such as vegetables, cheese, olives, salami or tuna. Cooked pasta is a moist starch that supports Bacillus cereus, a bacterium whose spores survive boiling, so how quickly the pasta is chilled matters as much as the dressing or mix-ins.
How to store pasta salad
- Rinse the cooked pasta under cold water until it is fully cool and drain it well before dressing. Never leave a pot of cooked pasta to cool on the stove for hours.
- Hold back about a quarter of the dressing and stir it in just before serving. Pasta absorbs dressing in the fridge, and a day-old salad tastes dry and bland otherwise.
- Add delicate ingredients such as fresh basil, arugula, avocado and cherry tomatoes at serving time; they wilt, blacken or weep within a day.
- For potlucks, carry it in a cooler and serve it over a tray of ice. A vinaigrette dressing does not make it safe to leave in the sun.
How to tell if pasta salad has gone bad
- A sour or fermented smell, or a fizzy, sharp taste.
- Pasta with a slimy, sticky coating or a mushy, swollen texture.
- Cloudy liquid collecting at the bottom, or mayonnaise dressing that has split.
- Mold on the pasta or on the cheese and vegetable pieces, or vegetables that have turned slimy.
