Couscous looks like a grain but is actually tiny granules of durum wheat semolina, which makes it a form of dried pasta. Like pasta, the dry product is shelf-stable for a year or two. Once steamed or soaked it becomes a moist starch that spoils on the same schedule as other cooked grains.

  • A couscous salad in which the vegetables have turned watery and the dressing smells fermented.
