Pork chops are slices cut from the loin, sold bone-in or boneless, thick or thin. As an intact whole-muscle cut they keep several days raw in the fridge. They are lean, so they dry out fast in the freezer unless wrapped tightly, while the rim of fat slowly turns rancid over long frozen storage.

How to store pork chops

How to tell if pork chops have gone bad

  • Fresh pork is pinkish with white fat. Gray, green-tinged or very dull meat, or yellowing fat, signals spoilage.
  • A sour or ammonia smell. Raw pork should smell like very little.
  • A slimy or tacky surface, often first along the bone and the fat edge.
  • Cooked chops that feel slick, smell off or show mold.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Frequently asked questions

How long are raw pork chops good in the fridge after buying them?

Raw pork chops are good for 3–5 days in a fridge at 40°F (4°C) or colder, starting from the day of purchase. If the sell-by date passes during that time they are still fine. If you cannot cook them within 5 days, freeze them instead of pushing the limit.

Why do my pork chops look gray or dark in places?

Dull or grayish patches where chops were stacked or pressed against the tray are usually from lack of oxygen and fade after a few minutes in air. Gray color over the whole surface combined with stickiness or a sour smell means spoilage. Color alone never proves pork is safe, so keep to the 3–5 day limit.

Is a little pink in cooked pork chops safe?

Yes. Pork chops are safe at 145°F (63°C) with a 3-minute rest, and at that temperature the center can still be slightly pink. This guideline replaced the older 160°F advice for whole cuts. Ground pork is different and still needs 160°F (71°C).

Can you freeze cooked pork chops?

Yes, cooked pork chops freeze for 2–3 months at best quality. Cool them within 2 hours, wrap individually, and freeze with gravy or sauce if you have it, since plain lean chops tend to come out dry. Thaw in the fridge and reheat to 165°F (74°C).
