How Long Does Veal Last?
Raw veal chops, cutlets and roasts last 3–5 days in the fridge and 4–12 months in the freezer. Ground veal lasts only 1–2 days. Cooked veal keeps 3–4 days.

Veal is meat from young calves, pale pink, very lean and fine-grained. It is sold as chops, roasts, thin cutlets for scallopini and as ground veal. Whole cuts keep like beef, but veal's low fat and high moisture mean thin cutlets dry out and discolor quickly, and ground veal follows the short ground-meat clock.
How to store veal
- Layer thin cutlets between sheets of parchment before freezing so you can peel off single pieces; they thaw in the fridge in a few hours.
- Pound cutlets just before cooking, not days ahead. Pounded meat has more damaged surface and loses moisture faster.
- Because veal is so lean, freezer burn shows up quickly. Wrap chops individually in plastic wrap before bagging, and press out all the air.
- Breaded, uncooked cutlets can be held in the fridge for a day, or frozen on a tray and then bagged, to fry straight from frozen.
How to tell if veal has gone bad
- Pale pink meat turning gray, brown or greenish. Veal is light-colored, so discoloration is easier to see than on beef.
- A slippery film on cutlets or pooled liquid that looks cloudy rather than clear pink.
- A sour or sulfur smell. Fresh veal is very mild, almost milky.
- Ground veal that has gone gray throughout with a tacky feel.

Not safe = perishable: no more than 2 hours at room temperature (1 hour above 90°F / 32°C). Not recommended = possible, but quality suffers or it serves no purpose.
Frequently asked questions
Does veal go bad faster than beef?
Whole cuts of veal keep about as long as beef: 3–5 days raw in the fridge. In practice thin cutlets are best used within 2–3 days, because so much of their surface is exposed and they dry and darken quickly. Ground veal is the exception and must be cooked or frozen within 1–2 days.
Can you freeze veal cutlets?
Yes. Veal cutlets freeze well for 4–12 months at 0°F (−18°C) when wrapped airtight; aim for the shorter end with very thin scallopini, which dry out first. Separate them with parchment, thaw in the fridge, and cook within a day or two of thawing.
How long does cooked veal parmesan or veal marsala last?
Cooked veal dishes last 3–4 days in the fridge. Sauce and cheese do not extend that. Refrigerate within 2 hours in a shallow covered dish, and reheat to 165°F (74°C). Breaded veal parmesan freezes acceptably for 2–3 months, although the coating softens.
What temperature does veal need to reach to be safe?
Veal chops, roasts and cutlets are safe at 145°F (63°C) followed by a 3-minute rest, the same as beef steaks. Ground veal, including meatballs and meatloaf mix that contains veal, needs 160°F (71°C) all the way through.
