Ranch dressing is a creamy blend of buttermilk, mayonnaise or oil, garlic, onion and herbs. Shelf-stable bottled ranch is acidified and pasteurized, but once opened its dairy and egg ingredients make it far more perishable than a vinaigrette.   • Mold specks on the surface, inside the cap or around the bottle neck.
