How to store smoked salmon
- After opening, rewrap the slices tightly in plastic wrap or move them to a small airtight container; the thin slices dry out and pick up fridge odors within a day if left in the torn pouch.
- Keep the pack in the coldest part of the fridge, not the door. Listeria grows slowly at 40°F (4°C) and even more slowly a few degrees colder.
- Freeze what you will not finish in a week. Separate portions with parchment paper, wrap tightly and thaw overnight in the fridge; cold-smoked salmon turns a little softer but is fine on bagels or in eggs.
- Put a brunch platter out in small batches and keep the rest chilled. Smoked salmon should not sit at room temperature for more than 2 hours.
How to tell if smoked salmon has gone bad
- A sour, ammonia-like or strongly fishy smell replacing the clean, smoky scent.
- A sticky, stringy slime or milky film between the slices. A light oily sheen is normal.
- Color fading to dull gray or brown at the edges, or green, white or black fuzzy mold spots.
- An unopened vacuum pack that has puffed up or lost its tight seal should be thrown away without tasting.
