How Long Does Trout Last?

Trout is a delicate, moderately oily freshwater fish, usually farmed rainbow or steelhead, sold whole and gutted or as thin skin-on fillets. Its fine flesh and thin fillets spoil quickly, a whole fish keeps best once the gut cavity is cleaned, and its oils limit how long it holds good flavor in the freezer.
How to store trout
- Gut freshly caught trout as soon as possible, rinse the cavity, and pack the fish in ice in a cooler with the drain open. The gut contents are what spoil a whole fish fastest.
- At home, pat whole trout dry inside and out, wrap loosely in plastic wrap and keep it on a tray of ice on the bottom shelf of the fridge.
- Freeze whole cleaned trout by dipping it in cold water and freezing it on a tray, repeating once or twice to build an ice glaze, then bag it. The glaze protects the thin skin from freezer burn.
- Thin trout fillets thaw in a few hours in the fridge, so move them from the freezer the morning you plan to cook them rather than days ahead.
How to tell if trout has gone bad
- On a whole fish, cloudy, sunken eyes and gills that have gone from bright red to brown or gray.
- A sour, muddy-rotten or ammonia smell, especially from the belly cavity.
- Thick, yellowish or sticky slime. A thin clear slime coat is natural on fresh whole trout.
- Belly walls that are soft, torn or discolored, and flesh that pulls away from the bones while raw.
