How Long Does Tofu Last?

Opened tofu lasts 3–5 days in the fridge when kept covered in fresh water that is changed daily. Unopened tofu keeps until its use-by date, and tofu freezes for 3–5 months.

Tofu is soy milk curdled and pressed into blocks, sold water-packed in refrigerated tubs or as silken tofu in shelf-stable aseptic cartons. It is high in protein and moisture and close to neutral in acidity, which makes it as perishable as fresh cheese or meat once the package is opened, even though it is a plant food.

How to tell if tofu has gone bad

  • A sour or sulfur-like smell. Fresh tofu smells faintly beany or of nothing at all.
  • A slimy, slippery film on the block that remains after rinsing.
  • Color changing from creamy white to tan, yellow or pink in the fridge. Yellowing in the freezer is normal and reverses on thawing.
  • A bloated, puffed-up sealed package, or packing water that is thick, stringy or very cloudy.
  • A sour or bitter taste, or any mold on the surface.

Can you eat tofu past its expiration date?

It is safest not to. Refrigerated tofu is pasteurized in its sealed tub, and the date assumes continuous cold storage. A tub that is a day or two past a best-by date and is not bloated or sour may be fine for quality, but tofu is a low-acid, high-protein food, and harmful bacteria give no visible sign. Freezing it before the date avoids the question.

Can tofu be eaten raw?

Yes, tofu is already cooked during manufacturing, since the soy milk is boiled before it is curdled, so it can be eaten straight from a freshly opened package. Drain and rinse it first. Because it can be contaminated after opening, use clean utensils and do not eat raw tofu that has been open for several days.

Why did my tofu turn yellow in the freezer?

Tofu turns yellow or amber when frozen because ice crystals change how its protein structure reflects light. It is completely normal, not freezer burn or spoilage, and the block returns to a creamy off-white as it thaws. Yellow or pink tofu in the refrigerator is a different matter and indicates spoilage.

Does tofu go bad if left out?

Yes. Raw or cooked tofu should not be left at room temperature for more than 2 hours, or 1 hour above 90°F (32°C). This includes tofu set out to press or marinate, so press it for 30 minutes or less on the counter, or do it in the refrigerator.
