How Long Does Soy Sauce Last?
Opened soy sauce stays at its best for about 1 month in the pantry and 1–2 years in the fridge. Unopened bottles keep 2–3 years. Old soy sauce is safe but less flavorful.
Soy Sauce — opened
shelf life- Unopened: 2–3 years in the fridge
Fridge at 40°F (4°C) or below · freezer at 0°F (−18°C). Freezer times are for best quality; frozen food stays safe longer.
Soy sauce is brewed from fermented soybeans, wheat, salt and water. Its very high salt content stops harmful bacteria almost completely, so it does not spoil in the usual sense. Oxygen is its real enemy: once the bottle is open, the sauce gradually darkens and the aroma turns flat and harsh, faster in a warm cupboard.
How to store soy sauce
- Keep the cap closed tightly between uses. Flavor loss in soy sauce is caused by oxidation, not by microbes.
- Refrigerate the bottle if you use it slowly; cold storage keeps the reddish-brown color and rounded aroma for a year or more.
- Always refrigerate reduced-sodium soy sauce after opening, because less salt means less protection against yeasts and mold.
- If you buy large jugs, decant into a small bottle for daily use and keep the rest sealed in the fridge.
- Store it away from the stove. A spot next to the burners is convenient but the repeated heat darkens it quickly.
How to tell if soy sauce has gone bad
- Mold or a floating film on the surface or around the inside of the neck, more likely in low-sodium sauce.
- A harsh, musty or otherwise unpleasant smell instead of the savory, slightly sweet brewed aroma.
- Color gone from clear reddish-brown to nearly black, with a flat, bitter, overly salty taste.
- Small white crystals at the cap or bottom are just salt and are harmless, not a spoilage sign.
Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.
Soy Sauce shelf life chart
| State | Fridge | Freezer | Pantry |
|---|---|---|---|
| Opened | 1–2 years | Not recommended | 1 month |
| Safe far longer at room temperature; the 1-month pantry figure is for peak flavor. Refrigerate low-sodium types. | |||
| Unopened | 2–3 years | Not recommended | 2–3 years |
Not safe = perishable: no more than 2 hours at room temperature (1 hour above 90°F / 32°C). Not recommended = possible, but quality suffers or it serves no purpose.
Frequently asked questions
Does soy sauce need to be refrigerated?
No, regular soy sauce does not need refrigeration to stay safe, because its salt level prevents bacterial growth. Major brewers recommend the fridge after opening for quality: the sauce stays fresher-tasting and lighter in color. Low-sodium soy sauce is the exception and should be refrigerated once opened.
Can soy sauce go bad?
Soy sauce very rarely becomes unsafe, but it does go stale. After opening, oxygen slowly darkens it and dulls the aroma, which is noticeable after a month or so in a warm pantry. Mold can occasionally grow, mainly in reduced-salt versions. Discard any bottle with mold or a foul smell.
Is expired soy sauce okay to use?
Yes, in nearly all cases. The date on soy sauce is a best-by date, and an unopened bottle often remains good for years past it. Opened bottles past the date are safe too if they show no mold, but taste the sauce first; if it is harsh and flat, it will not help your cooking.
What are the white bits floating in my soy sauce?
White crystals around the cap or at the bottom are usually salt that has come out of solution, which is harmless. A white or pale film floating on the surface is different: it may be film yeast or mold, especially in low-sodium sauce, and that bottle should be thrown away.
