Watermelon is more than 90 percent water, with low-acid flesh protected by a thick rind. Whole, it keeps about a week on the counter. Once cut, the sweet, wet, low-acid flesh is an ideal place for bacteria carried in from the rind or the knife, so cut watermelon must stay refrigerated.

  • A slimy or slippery film on the cut surface.
  • A sour, tangy or fizzy taste, or a fermented smell; stop eating if a piece tastes carbonated.
  • Flesh that has turned dark, mushy, gritty or is pulling away from the seeds in a dry, mealy way.
  • A whole melon with soft spots, dark sunken patches, mold on the rind or liquid seeping out.
