Cantaloupe has soft, low-acid orange flesh under a rough, netted rind. That netting traps soil and bacteria and is hard to clean, which is why cantaloupe has been linked to Salmonella and Listeria outbreaks. Whole melons can soften on the counter, but cut cantaloupe belongs in the fridge without exception.

How to store cantaloupe

How to tell if cantaloupe has gone bad

  • Flesh that looks translucent, waterlogged or darker orange, and feels slimy.
  • A sour, fermented or nail-polish-like smell instead of a sweet musky one.
  • A whole melon with soft, sunken or bruised areas, a wet stem scar, or mold in the netting.
  • Liquid pooling in the container and pieces that fall apart when lifted.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Counter time is for a melon that still needs to soften; refrigerate it once it smells fragrant.

Not safe = perishable: no more than 2 hours at room temperature (1 hour above 90°F / 32°C). Not recommended = possible, but quality suffers or it serves no purpose.

Frequently asked questions

Why does cantaloupe need to be washed before cutting?

Because the knife carries bacteria from the rind into the flesh. Cantaloupe grows on the ground, and its rough netting holds onto soil and microbes that a quick rinse will not remove. Scrub it with a clean brush under running water, dry it, and then cut. Do not use soap or bleach.

How long is cut cantaloupe good for?

Cut cantaloupe is good for 3–4 days in the fridge in a sealed container. People who are pregnant, older adults and anyone with a weakened immune system are more vulnerable to Listeria, which can grow at fridge temperature, so they should eat cut melon promptly and avoid any that has been stored for several days.

How can you tell if a cantaloupe is ripe?

A ripe cantaloupe smells sweet and musky at the blossom end, has beige or golden skin under the netting rather than green, and gives slightly when pressed opposite the stem scar. A smooth, clean stem scar means it was picked mature. It will soften on the counter but not get sweeter.

Can you freeze cantaloupe?

Yes. Freeze cubes or balls on a tray, then bag them for 8–12 months at best quality. The texture turns soft after thawing, so use frozen cantaloupe in smoothies, chilled soups, sorbet or as ice in drinks rather than in a fruit platter.

Can cantaloupe sit out on a buffet?

Only for up to 2 hours, or 1 hour if it is above 90°F (32°C). After that, cut cantaloupe should be discarded rather than returned to the fridge. For parties, set the serving bowl in a larger bowl of ice and refill it with small amounts from the fridge.
