Pineapple is harvested ripe and does not get any sweeter afterward, though the shell may turn more golden. Its sugary, juicy flesh ferments readily, so a whole pineapple has only a few days at room temperature. The fruit is fairly acidic, which helps cut pineapple hold up slightly better than melon in the fridge.

  • A sharp fermented, vinegar or alcohol smell, especially at the base of a whole fruit.
  • A soft, wet or moldy bottom, often with white mold around the stem scar or between the eyes.
  • Flesh that has turned dark yellow-brown, translucent or mushy, or that fizzes on the tongue.
  • Leaves that are brown and dry and pull out with no resistance, together with a wrinkled, dull shell.
