How to tell if corned beef has gone bad
- Raw: a swollen pouch, cloudy ropy brine or a rotten smell on opening. The brine should smell spicy and salty, not sour.
- Cooked slices that have turned slimy or tacky, or smell sour.
- Gray-green patches or fuzzy mold. A rainbow-like sheen on sliced corned beef by itself is a harmless light effect on the cut muscle fibers.
- Canned: a bulging, leaking, deeply dented or spurting can should be discarded without tasting.
