How Long Does Brisket Last?
Raw brisket lasts 3–5 days in the fridge and 4–12 months in the freezer. Smoked or braised brisket keeps 3–4 days refrigerated and 2–3 months frozen.

Brisket is a large, tough cut from the chest of the steer, sold as a whole packer cut or as a separate flat or point, and usually smoked or braised for many hours. Raw, it keeps like any whole beef cut. Cooked, its sheer size and long cooking times make cooling and holding the real safety concerns.
How to store brisket
- A cryovac-sealed packer brisket can follow the packer's use-by date while the seal is intact. Once opened, trimmed or rubbed, cook it within 3–5 days.
- A dry rub applied the night before is fine, but keep the brisket covered in the fridge on a rimmed tray that catches its purge.
- If you rest a finished brisket in a cooler, keep it above 140°F (60°C) and check with a thermometer. Once it drops below that, the 2-hour clock starts.
- Refrigerate leftovers in large unsliced chunks with some of the juices, and slice as you reheat. Sliced brisket dries out fast.
- Vacuum-sealed portions of cooked brisket freeze well and can be reheated in the bag in simmering water.
How to tell if brisket has gone bad
- A sour or sulfur smell from the raw meat that lingers after the vacuum bag has been open for 10–15 minutes and the surface has been rinsed of purge.
- Slimy, sticky fat cap or meat surface, or green-gray discoloration.
- A bloated, gassy vacuum package.
- Cooked brisket with a slick film, sour smell or mold. A pink smoke ring under the bark is normal, not a sign of undercooking or spoilage.
Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

My vacuum-packed brisket smells funny when I open it. Is it spoiled?
Not necessarily. Meat sealed without oxygen often releases a tangy, slightly sulfurous odor when the bag is first cut. Rinse or pat off the liquid and wait 10–15 minutes; if the smell fades, that was confinement odor. If it persists, or the meat is slimy or the bag was puffed up, discard it.
