How Long Does Oyster Sauce Last?

Oyster sauce is a thick, glossy brown sauce made from oyster extract, sugar, salt and cornstarch. It is far less salty and acidic than soy or fish sauce, and its sugar and starch give microbes something to feed on. That makes it one of the few Asian pantry sauces that genuinely must be refrigerated after opening.
How to store oyster sauce
- Put oyster sauce in the fridge as soon as you open it. Do not store it beside the soy sauce in the cupboard.
- Wipe the neck and the inside of the cap after pouring; the thick sauce collects there, dries out and is where mold usually starts.
- Pour or squeeze the sauce out instead of dipping a spoon that has touched other food into the bottle.
- Let the cold, thick sauce stand at room temperature for a few minutes, or store the bottle cap-down, to make it pour more easily.
- Buy a small bottle unless you cook with it weekly, since quality falls off after about 6 months open.
How to tell if oyster sauce has gone bad
- White, green or gray fuzzy mold on the sauce surface or crusted around the bottle neck and cap.
- A sour, fermented or sharply fishy smell replacing the mild, sweet-savory aroma.
- Watery liquid separating from a lumpy or clotted body that will not recombine when shaken.
- Fizzing, bubbles or a bottle that releases gas when opened.
