How Long Does Ground Chicken Last?

Ground chicken is chicken meat, sometimes with skin, minced into a soft, pale, sticky mixture used for burgers, meatballs, lettuce wraps and dumplings. It combines the two riskiest traits in the meat case: it is poultry, which commonly carries Salmonella and Campylobacter, and it is ground, which spreads those bacteria all the way through.
How to store ground chicken
- Aim to cook ground chicken the day you buy it or the next day. It has the least margin of any common ground meat.
- Freeze it flat in a zip-top bag, scored into quarters with the back of a knife through the bag, so you can snap off a portion.
- The raw meat is very sticky and clings to bowls, hands and spoons. Wash everything it touched in hot soapy water and do not reuse the mixing bowl for the cooked food.
- Shape burgers or meatballs with damp hands, then freeze them raw on a parchment-lined tray before bagging; they hold their shape better cooked from frozen.
How to tell if ground chicken has gone bad
- A sour or sulfur smell. Fresh ground chicken is nearly odorless.
- Pale pink turning gray, yellowish or dull beige across the surface.
- Extra stickiness that has become a slimy, stringy film, or a watery, cloudy pool in the tray.
- Cooked ground chicken that smells off or has developed a slick surface.
