A whole chicken is an intact bird of roughly 3–6 pounds, often with a bag of giblets tucked in the cavity. The cavity traps moisture and bacteria, so it keeps no longer in the fridge than cut pieces do. Frozen whole, though, the skin protects the meat and it holds quality longer than parts.
How to store whole chicken
- Take the giblet bag out of the cavity before freezing a fresh bird, and freeze the giblets separately; they keep quality for only 3–4 months and are hard to remove from a frozen chicken.
- Do not wash the chicken. Rinsing splashes bacteria around the sink; pat it dry with paper towels instead, then wash your hands.
- Salting or dry-brining the bird uncovered overnight is fine on the bottom shelf, away from produce, within the 2-day limit.
- Strip the meat from a roasted chicken before refrigerating it. It cools faster off the carcass and takes up far less room.
- Simmer the carcass for stock within 3–4 days, or freeze the bones in a bag until you have time.
How to tell if whole chicken has gone bad
- A sour or sulfur smell from the cavity, which is where a whole bird turns first.
- Sticky or slimy skin, especially under the wings and between the legs and body.
- Skin or flesh shifting to gray or green, or dark greenish patches on the giblets.
- A bloated, tight vacuum bag on a packaged bird.
- Roasted chicken that smells sour or feels slippery.
