How Long Do Lentils Last?

Dry lentils keep best quality for 1–2 years in the pantry and remain safe beyond that if dry and insect-free. Cooked lentils last 3–4 days in the fridge and 2–3 months in the freezer.

Lentils are small, lens-shaped dried legumes that cook without soaking. In their dry state they are shelf-stable for years, but they gradually lose moisture, fade in color and take longer to soften. Split red and yellow lentils have had their skins removed, so they age and break down a little faster than whole green, brown or black lentils.

  • Pinholes in the lentils, powdery residue, webbing or small beetles in the jar.
  • A musty smell, damp clumps or any mold on dry lentils.
  • Cooked lentils or dal with a sour smell, bubbling or fizzing on the surface, or a slimy texture.
  • Badly faded, shriveled lentils that stay hard after long simmering are very old, though not unsafe.

No. Lentils are small enough to cook in 15–30 minutes without soaking, which is one reason they are a convenient pantry staple. Very old lentils may benefit from an hour's soak. Unlike red kidney beans, lentils do not need a special boiling step, but they should always be fully cooked.

Can you freeze cooked lentils?

Yes, cooked lentils freeze well for 2–3 months. Cool them quickly, drain whole lentils or leave soups and dal as they are, and pack in freezer bags with the air pressed out. Thaw overnight in the fridge or reheat directly from frozen on the stove.
