What changes is the bean itself: over time the skins and cell walls harden, and old beans take far longer to soften or never fully soften. After soaking or cooking, they become a perishable food.
How to store dried beans
- Pour beans from their thin plastic bag into a glass jar or lidded container, and keep them in a cool, dark cupboard; light fades their color and warmth hardens them faster.
- Do not mix a new bag into a jar of old beans. Different ages cook at different rates, leaving some mushy and others hard.
- Sort beans on a tray before soaking and pick out small stones, shriveled beans and any with pinholes, which indicate bean weevils.
- Cook a large pot and freeze the extra in 1½-cup portions with some cooking liquid, the equivalent of one can, for quick use.
How to tell if dried beans have gone bad
- Tiny round holes in the beans, fine dust at the bottom of the jar, or small beetles, all signs of bean weevils.
- Mold, a musty smell or damp, clumped beans, which mean moisture got in.
- Soaking water that is foamy and smells sour or fermented, usually after a long soak in a warm kitchen.
- Cooked beans that smell sour, feel slimy or have a white film on the liquid.
- Beans that stay hard after hours of simmering are old rather than spoiled.

Do dried beans go bad or expire?
Not in a safety sense. Kept dry and free of insects, dried beans stay safe to eat for many years. Quality is best for 1–2 years; older beans lose moisture, take much longer to cook and may never turn creamy. A pinch of baking soda in the cooking water can help soften them.
Why are my old beans still hard after cooking?
Age is the most likely reason. As beans sit in storage, especially somewhere warm, their cell walls harden and resist water. Hard water and adding acidic ingredients such as tomatoes or vinegar too early make it worse. Pressure cooking is the most effective way to rescue old beans.
Are undercooked kidney beans dangerous?
Yes. Raw and undercooked red kidney beans contain a natural toxin, phytohaemagglutinin, that causes severe nausea and vomiting within hours. FDA advises soaking them and then boiling in fresh water for at least 10 minutes to destroy it. Slow cookers may not get hot enough, so boil kidney beans first.

Cooked beans last 3–4 days in the fridge in a covered container, stored in some of their cooking liquid. Cool them quickly and refrigerate within 2 hours. For longer storage, freeze them for 2–3 months; they reheat with very little change in texture.
Can I soak beans overnight on the counter?
An 8–12 hour soak at cool room temperature is the traditional method and is generally fine, since the beans will be boiled afterward. In a warm kitchen, or for any soak longer than that, put the bowl in the fridge to keep the beans from fermenting and souring.
