Quinoa is the small, protein-rich seed of a plant related to spinach and beets, cooked and eaten like a grain. Dry quinoa is very low in moisture and keeps for years in the pantry, although it contains more oil than white rice and eventually tastes stale. Cooked quinoa is a moist, perishable food with the same limits as cooked rice.

How to store quinoa

How to tell if quinoa has gone bad

  • Dry quinoa that smells musty, sour or like old oil instead of faintly grassy and nutty.
  • Webbing, clumps or small insects in the dry seeds.
  • Cooked quinoa with a sour smell, a slimy or wet-sticky feel, or visible mold.
  • Cooked quinoa that has hardened and dried out in the fridge is past its best, even if not yet spoiled.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Frequently asked questions

Does dry quinoa go bad?

Very slowly. Stored sealed and dry, quinoa stays good for 2–3 years and is usually fine past its best-by date. Over time its oils oxidize and it takes on a stale or bitter flavor. Discard it if it smells rancid or musty, or shows any sign of insects or moisture.

How long is cooked quinoa good for in the fridge?

Cooked quinoa is good for 3–4 days in an airtight container at 40°F (4°C) or below. Like rice, it can carry heat-resistant spores, so refrigerate it within 2 hours of cooking. Meal-prep bowls made on Sunday should be eaten by Wednesday or Thursday, or frozen.

Can you freeze cooked quinoa?

Yes, cooked quinoa freezes well for 2–3 months. Cool it completely, pack it in freezer bags pressed flat, and squeeze out the air. Reheat from frozen in the microwave with a spoonful of water, or stir it frozen into hot soup.

Why does my quinoa taste bitter or soapy?

That is usually saponin, a natural coating on the seeds, not spoilage. Most packaged quinoa is pre-rinsed, but rinsing it in a fine strainer for 30 seconds removes what is left. If the dry quinoa also smells like stale oil, it has gone rancid and should be replaced.
