How to store cooked beans
- Store beans in some of their cooking liquid. It keeps the skins from drying and splitting, and the liquid is useful for soups and refried beans.
- Cool a big pot quickly by dividing it into shallow containers; beans are dense and a full Dutch oven takes hours to chill in the middle.
- Freeze in 1½-cup portions with liquid to cover, which is about what a 15-ounce can holds, so they swap directly into recipes.
- Leave half an inch of headspace in rigid containers, since the liquid expands when frozen.
- Thaw overnight in the fridge or drop the frozen block into a simmering soup or chili.
How to tell if cooked beans have gone bad
- A sour or fermented smell; beans turn sour quickly and this is usually the first thing you notice.
- Cooking liquid that has become cloudy-white, slimy or foamy with small bubbles.
- A slippery film on the beans themselves, or visible mold on the surface.
- Thick, gelled liquid in cold beans is normal starch and thins again when heated.

Sliminess and bubbles mean bacteria or yeasts are fermenting the beans, and the batch should be thrown out. This happens quickly if the pot cooled slowly or has passed 4 days. Do not rinse and reuse them; rinsing removes the slime you can feel but not what caused it.
