Mussels are thin-shelled bivalves, almost always farmed on ropes and sold live in mesh bags, or cooked and vacuum-packed or frozen. They are safe only while alive, and their fragile shells and habit of gaping make them less hardy out of water than clams or oysters, so they are best cooked soon after purchase.
How to store mussels
- Leave mussels in their mesh bag, or move them to a colander set over a bowl, cover with a damp towel and keep them at the back of the fridge. Pour off any liquid that collects each day.
- Do not seal live mussels in a plastic bag or airtight tub, and do not cover them with tap water; both kill them.
- Pull off the beards and scrub the shells only right before cooking. Debearding injures the mussel and shortens its life.
- Freeze cooked mussel meat in its strained cooking broth in a rigid container. This keeps a better texture than freezing raw mussels in the shell.
- Check the harvest or packed-on date printed on the bag tag at the store and choose the most recent one.
How to tell if mussels have gone bad
- Mussels that stay wide open after a firm tap or a squeeze of the shell for several seconds are dead; discard them.
- Broken or crushed shells, common with thin mussel shells at the bottom of the bag.
- A strong fishy, sulfur or rotten odor instead of a fresh, salty smell.
- Unusually heavy closed mussels may be filled with mud, and ones that feel very light and rattle are empty or dried out.
- Cooked mussel meat that is shrunken, dry, slimy or sour-smelling.
