Squid, sold on menus as calamari, is a mollusk with a tube-shaped body and tentacles, available whole, cleaned, or cut into rings, and very often frozen. Its lean, watery flesh spoils as quickly as fresh fish in the fridge, but it is one of the few seafoods whose texture is barely harmed by freezing, which actually tenderizes it slightly.

  • A sour, ammonia or strongly fishy odor. Fresh squid smells faintly sweet and of the sea.
  • Flesh turning from glossy ivory-white to pink, purple-tinged, yellow or gray. The speckled skin may be purple naturally, but the meat underneath should be white.
  • A thick, sticky slime rather than a clean, slippery wetness.
  • Flesh that is soft, mushy or tears easily instead of firm and resilient.
