- Cool fried rice fast: spread it in a thin layer in a shallow container and refrigerate within 2 hours, sooner if you can.

- Freeze in flat freezer bags in single portions; frozen fried rice can go straight into a hot skillet or the microwave without thawing.
- Reheat in a hot wok or skillet with a teaspoon of oil until steaming throughout, 165°F (74°C). Sprinkle on a little water if the grains have hardened.
