Parmesan is a hard, dry grating cheese aged for a year or more until very little moisture is left. That dryness and its high salt content make it one of the longest-keeping cheeses in the fridge. Wedges, fresh-grated tubs and the shelf-stable shaker can all behave differently, so check which one you have.
How to store parmesan
- Wrap a wedge in parchment or wax paper and then loosely in foil or a zip-top bag; it needs a little air, and tight plastic makes the surface sweat and mold.
- Grate only what you need. A whole wedge keeps far longer than grated cheese, which has vastly more surface exposed to air.
- Save the rind in a freezer bag and simmer it in minestrone, beans or tomato sauce for flavor, then fish it out before serving.
- Freeze grated Parmesan flat in a freezer bag; it stays loose and can be sprinkled straight from frozen.
How to tell if parmesan has gone bad
- Fuzzy green, blue or gray mold on a wedge; on this hard cheese you can cut at least 1 inch around the spot and keep the rest.
- Grated Parmesan that is clumped and damp, smells sour or musty, or shows any mold should be discarded entirely.
- A rancid, sour or sharply ammonia-like smell replacing the nutty, savory aroma.
- A darkened, yellow-brown, rock-hard surface, which is dried-out cheese: a quality problem that can be trimmed or grated into soup.
Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Does grated Parmesan in the green shaker need to be refrigerated?

Can you eat the rind of Parmesan?
Yes, the rind of real Parmigiano Reggiano is simply dried cheese with no wax, so it is edible but very tough. Most cooks simmer it in soups and sauces to extract flavor. Check other brands, as some hard cheeses carry an inedible wax or coating.
