How Long Do Peanuts Last?

Opened peanuts keep 2–3 months in a cool, dry pantry, about 6 months in the fridge and up to 1 year in the freezer. Boiled peanuts are perishable and last only 3–4 days refrigerated.

Peanuts are legumes that grow underground, but they store like nuts: about half their weight is oil, which slowly turns rancid in warmth and air. Because they grow in soil, damp peanuts are prone to Aspergillus molds that produce aflatoxin, so dryness matters as much as temperature. Boiled peanuts are a separate case and are fully perishable.

How to tell if peanuts have gone bad

  • A sour, paint-like or old-oil smell and a bitter taste, which mean the oil has gone rancid.
  • Any mold, gray-green or black dust on shells or kernels, or a musty smell. Discard the whole batch without tasting; peanut molds can carry aflatoxin.
  • Shriveled, darkened or discolored kernels inside an otherwise normal-looking shell.
  • Soft, soggy texture in roasted peanuts, from absorbed moisture.
  • Boiled peanuts that are slimy, fizzy or sour-smelling.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Boiled peanuts last 3–4 days in the refrigerator and about 6 months in the freezer. They are wet, cooked legumes, so the 2-hour rule applies: do not leave them out longer than that, or 1 hour in heat above 90°F (32°C). A roadside bag left in the car all afternoon should be thrown away.

Is it safe to eat moldy peanuts if I pick off the bad ones?

No. Throw out the whole batch. Molds that grow on peanuts can produce aflatoxin, which is not destroyed by roasting or cooking and may be present in nuts that look normal. Commercial peanuts are screened for it, but peanuts that mold at home from damp storage are not worth the risk.

Do peanuts in the shell last longer than shelled peanuts?

Slightly. The shell protects the kernel from light and air, so roasted in-shell peanuts keep 2–4 months in the pantry and 6–9 months in the fridge. The shell also traps moisture, though, so they must stay dry. For long storage of either kind, the freezer is best.

Can old peanuts make you sick?

Stale or rancid peanuts mostly just taste bad, though they can upset your stomach. The real hazard is mold, which you cannot always see. Discard peanuts that smell musty, show any mold, look shriveled and dark, or have been stored somewhere damp, regardless of the date on the package.
