Cashews are softer and starchier than most nuts, with a moderate oil content that is mostly monounsaturated, so they resist rancidity better than walnuts or pecans. Their weak point is moisture: cashews readily soak up humidity, turning soft and, in damp conditions, moldy. Even cashews sold as raw have been steamed to remove the irritating shell oil.
How to store cashews
- Reseal the can or jar tightly after every handful. Humidity is what turns cashews soft and chewy long before the oil goes rancid.
- In a humid climate or a kitchen without air conditioning, keep opened cashews in the fridge in a screw-top jar rather than the pantry.
- Freeze raw cashews bought in bulk for cashew cream or stir-fries in recipe-sized bags so you only open what you need.
- Revive cashews that have gone slightly soft but still taste sweet by toasting them for 5–8 minutes at 325°F (165°C), then cool them completely before sealing.
How to tell if cashews have gone bad
- A bitter or sour taste and a smell like paint or stale frying oil; fresh cashews taste mild, sweet and creamy.
- A soft, rubbery or chewy texture with no crunch, meaning they have absorbed moisture.
- Dark spots, gray or blue-green fuzz, or a musty, damp-basement smell — signs of mold, so discard the whole container.
- Shriveled, darkened or oily-looking nuts, or fine webbing and small insects in the jar.
