Cashews are softer and starchier than most nuts, with a moderate oil content that is mostly monounsaturated, so they resist rancidity better than walnuts or pecans. Their weak point is moisture: cashews readily soak up humidity, turning soft and, in damp conditions, moldy. Even cashews sold as raw have been steamed to remove the irritating shell oil.

  • A bitter or sour taste and a smell like paint or stale frying oil; fresh cashews taste mild, sweet and creamy.
  • A soft, rubbery or chewy texture with no crunch, meaning they have absorbed moisture.
  • Dark spots, gray or blue-green fuzz, or a musty, damp-basement smell — signs of mold, so discard the whole container.
  • Shriveled, darkened or oily-looking nuts, or fine webbing and small insects in the jar.

Soft cashews have absorbed moisture from the air, usually because the container was not sealed. If they still smell and taste sweet, they are safe, and a few minutes in a low oven restores the crunch. If they also taste bitter, smell musty or show any mold, throw them out.

Do cashews go bad after the expiration date?

Not automatically. The date on cashews is a best-quality date, and nuts stored cool and sealed are often fine for months afterward. Check for the two real problems: rancidity, which you can smell and taste, and mold, which shows as fuzz, dark spots or a musty smell.

How long do soaked cashews last?

Soaked cashews keep only 1–2 days in the fridge. Once they are wet they behave like a perishable food, so soak them in the refrigerator if it will take more than 2 hours, drain them, and blend or cook them promptly. Cashew cream and cashew cheese keep about 3–4 days refrigerated.

Can cashews be frozen?

Yes. Cashews freeze well for up to 1 year at best quality in an airtight freezer bag. Their low moisture means no texture damage. Let the bag warm up before opening it so condensation does not settle on the nuts and soften them.
