Pecans are roughly 70 percent oil by weight, one of the highest fat contents of any nut, and much of that oil is unsaturated. How to store pecans
- Buy pecans in fall when the new crop arrives, then freeze what you will not use within two months; holiday-baking leftovers are what most often go rancid in the cupboard.
- Freeze pecan halves in a zip-top freezer bag with the air squeezed out. They can be thawed and refrozen several times without noticeable loss of quality.
- Keep them sealed away from strong-smelling food. The high oil content absorbs odors from onions, fish and even cardboard.
- Store halves rather than pieces when you can, and chop as needed. Broken surfaces oxidize faster.
- Let refrigerated or frozen pecans come to room temperature in the closed container so condensation does not form on the nuts.
How to tell if pecans have gone bad
- A sharp, bitter, paint-like or fishy smell in place of the usual sweet, buttery aroma.
- An acrid, sour taste that lingers at the back of the throat.
- Kernels that have gone from golden or reddish-brown to very dark brown, or that look greasy and feel limp.
- Shriveled, dry, lightweight kernels, or in-shell pecans that rattle when shaken.
- White or gray fuzzy mold, webbing or tiny holes in the shell — discard the batch.
