How to store popcorn
- Pour kernels from the plastic bag into a glass jar with a tight lid. Kernels need to hold on to their internal moisture, roughly 14 percent, in order to pop.
- Keep kernels in a cool cupboard, not the fridge or freezer, where dry air pulls moisture out of them.
- Leave microwave popcorn in its plastic overwrap until you use it; the wrap keeps the oil from oxidizing and the kernels from drying.
- Let freshly popped corn cool completely before sealing it in a container, or trapped steam will make it chewy.
- Store plain popped corn without butter. Buttered popcorn turns soggy and the butter goes off, so add toppings just before eating.
How to tell if popcorn has gone bad
- A rancid, paint-like or stale-oil smell from a microwave bag or pre-popped popcorn.
- Popped corn that is chewy, tough or squeaky between the teeth, which is staleness rather than spoilage.
- Kernels with a musty smell, visible mold, clumping from damp, or insects and webbing in the jar.
- Lots of unpopped kernels are a sign the batch has dried out, not that it is unsafe.

Do popcorn kernels expire?
Not in a safety sense. Dry kernels are shelf-stable and stay safe for years if kept dry and free of insects, but they pop best within 1–2 years. As they lose their internal moisture, more of them fail to pop and the popped pieces come out small and tough.
Is it OK to eat expired microwave popcorn?
Usually, if it smells normal. The date is about quality: the oil and butter flavoring in the bag slowly turn rancid and the kernels dry out. A bag a few months past its date typically pops fine. If the popped corn smells like paint or tastes bitter or soapy, throw it away.
Why are my popcorn kernels not popping?
