Potato chips are thin potato slices fried or baked until almost all the water is gone, then salted and sealed in bags flushed with nitrogen. They are too dry for bacteria to grow, so chips fail in two other ways: they absorb humidity and go stale, and the frying oil oxidizes and turns rancid.

  • A smell like old paint, crayons, putty or stale frying oil when you open the bag, which means the oil has turned rancid.
  • A bitter, soapy or sharp aftertaste.
  • Chips that bend or chew instead of snapping. This is staleness: unpleasant but not harmful.
  • Any mold, clumping from moisture, pantry moths or webbing inside a bag that was left open.

Will stale or expired chips make you sick?

How do you keep potato chips fresh after opening?

Seal out air and humidity. Press the air from the bag, fold the top over several times and clip it, or use an airtight container, and store it in a cool, dark cupboard. In a humid kitchen even a clipped bag softens within days, so a rigid sealed container works better.
