Beef jerky is lean meat that has been marinated, heated and dried until there is too little available water for bacteria to grow. Commercial jerky is sealed with an oxygen absorber, which is why it keeps for a year unopened. Once the bag is open, the jerky takes on moisture and oxygen, and mold and rancid fat become the concerns.
How to store beef jerky
- Leave the small oxygen-absorber packet in the bag and press out the air before resealing; do not eat the packet.
- Refrigerate opened jerky if you will not finish it within 3 days, especially moist, tender styles, which carry more water than old-fashioned dry jerky.
- When making jerky at home, USDA recommends heating beef to 160°F (71°C) before or during drying, because a dehydrator alone may not get hot enough to kill bacteria.
- Blot any beads of fat from homemade jerky before storing it, and pack it in airtight jars or vacuum bags. Fat is what turns rancid first.
- Freeze jerky in a freezer bag with the air pressed out if you want to keep it for months.
How to tell if beef jerky has gone bad
- Fuzzy or powdery spots in white, green or gray, often with a musty smell. That is mold, and the whole bag should be discarded.
- A rancid, sour or paint-like smell instead of a smoky, savory one.
- Jerky that feels wet, sticky or slimy, which means it has absorbed moisture.
- A puffed-up sealed bag, or a bag that has lost its vacuum and looks loose before the date.

It depends on how it looks. Salt or fat that has come to the surface appears as flat white crystals or a greasy, waxy film that is smooth to the touch. Mold is fuzzy, raised or cobweb-like, may be white, green or gray, and often smells musty. If it is mold, throw the whole bag away; do not cut around it.
