Hard pretzels are lean wheat dough dipped in an alkaline bath and baked until dry and glassy. They contain very little fat, so they resist rancidity better than chips and mostly just go stale. Soft pretzels are a different case: they are bread, and they dry out or mold within a couple of days.

  • Soft pretzels with wet, pitted patches where the salt has melted into the crust, or that have dried rock hard.
