A whole turkey is a 10–25 pound bird bought fresh or, more often, frozen solid for Thanksgiving and other holidays. Its size drives every storage decision: a frozen bird needs several days in the refrigerator to thaw, a fresh one keeps only a day or two, and the cooked carcass must be carved before it will chill safely.
How to store whole turkey
- Count backward from the meal: a 16-pound frozen turkey needs about 4 days in the fridge to thaw, plus it can wait 1–2 days after that. Thaw it breast-side up on a rimmed tray.
- Pick up a fresh turkey no more than 1–2 days before roasting. If it carries a use-by date and is kept very cold by the store, follow the date, but not beyond.
- Forgot to thaw? Submerge the wrapped bird in cold water, 30 minutes per pound, changing the water every 30 minutes, then cook at once. Never thaw on the counter or in the garage.
- Within 2 hours of serving, remove the stuffing, carve all the meat from the bones and refrigerate it in shallow containers.
- Freeze leftover meat with a little gravy or broth in portions, and the carcass in a bag for soup.
How to tell if whole turkey has gone bad
- A sour or sulfur smell from the raw bird, strongest inside the cavity and around the neck flap.
- Skin that is slimy or sticky after the packaging liquid is wiped away, or gray-green discoloration.
- A bloated package on a fresh turkey, or a frozen turkey with torn wrapping and large dry, white freezer-burned areas.
- Leftover turkey that smells sour or feels slippery.
