How to store stuffing
- Scoop all stuffing out of the turkey or chicken as soon as the bird comes out of the oven; never store leftover stuffing inside the carcass.
- Refrigerate in shallow containers within 2 hours. Stuffing is dense and insulating, so a deep bowl cools slowly.
- Do not mix wet and dry ingredients ahead of time and leave the raw mixture in the fridge overnight. Prepare the components separately and combine them just before baking.
- Reheat covered with foil at 350°F (175°C), moistened with a few tablespoons of broth, until the center reaches 165°F (74°C); uncover at the end to crisp the top.
- Freeze in portions in freezer bags with the air pressed out, and reheat from frozen, covered, in the oven.
How to tell if stuffing has gone bad
- A sour or musty smell, particularly in stuffing made with sausage, giblets, oysters or egg.
- A slimy or sticky-wet texture rather than moist and crumbly.
- Mold on the bread cubes, which shows up as white, green or blue fuzz.
- Drying out and hardening at the edges is only a quality problem and is fixed with broth.
