Mangoes are picked mature but hard and ripen at room temperature, turning soft, fragrant and sweet over several days. As a tropical fruit they are sensitive to cold: refrigerating an unripe mango stalls ripening and can leave gray, off-flavored flesh. Once ripe, the fridge slows them down for about a week.
How to store mango
- Ripen hard mangoes on the counter, or in a paper bag to speed things up, and judge ripeness by a gentle squeeze and a fruity smell at the stem, not by red color.
- Move a mango to the fridge as soon as it yields to pressure like a ripe avocado; left out, it goes from ripe to fermented in a couple of days.
- Wash the skin before slicing so the knife does not carry surface bacteria into the flesh.
- Freeze peeled cubes or cheeks on a tray, then bag them; frozen mango keeps its flavor very well for smoothies, lassi and salsa.
How to tell if mango has gone bad
- A sour, alcoholic smell at the stem end or sap-like liquid oozing from the skin.
- Large black, sunken areas on the skin with soft, dark flesh beneath them; a few small black freckles are normal on a ripe mango.
- Flesh that is brown or gray, mushy and stringy, or tastes fizzy.
- Mold around the stem or on any split in the skin.
