White rice has had its bran and germ milled away, and with them nearly all of the oil that could turn rancid. What remains is dry starch that is too low in moisture for bacteria or mold to grow. Kept dry and protected from insects, white, jasmine, basmati and arborio rice stay safe to eat for decades.

How to tell if white rice (uncooked) has gone bad

  • Small brown or black beetles (rice weevils), tiny larvae, or grains that are hollowed out or dusty.
  • Silky webbing or clumps of grains stuck together, which are signs of pantry moth larvae.
  • A musty, moldy or damp smell, or any visible mold, meaning water got into the container.
  • A stale, oily or chemical odor, which can happen if rice absorbed smells from nearby cleaning products or strong spices.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Does uncooked white rice expire?

No, not in any safety sense. Dry white rice contains almost no fat or moisture, so nothing in it can turn rancid or support bacterial growth, and the printed date refers to peak quality only. Rice that is years past its best-by date is fine to cook if it is dry, free of insects and smells neutral.

What are the little bugs in my rice?

They are most likely rice weevils, small dark beetles whose eggs are laid inside the grain before packaging. Discard heavily infested rice, vacuum the shelf, and check nearby flour, pasta and cereal. Storing new rice in hard airtight containers keeps an infestation from spreading.

Why does white rice last longer than brown rice?

White rice lasts longer because the oily bran layer has been removed. Brown rice keeps that bran, and its oils oxidize and turn rancid within about 6 months in the pantry. White rice has nothing left to go rancid.

Does instant or flavored rice last as long?

No, follow the date more closely for these. Plain instant rice keeps for years, but seasoned rice mixes contain oils, dried vegetables, dairy powders or seasoning packets that lose quality or go rancid. Use boxed mixes within a few months of the printed date.
