How Long Does Cooked Rice Last?
Cooked rice lasts 3–4 days in the fridge and about 6 months in the freezer. Refrigerate it within 2 hours of cooking, sooner if you can, and throw out rice that sat at room temperature longer than that.

Cooked rice is one of the riskier leftovers in the kitchen. Dry rice commonly carries spores of Bacillus cereus that survive boiling; if the cooked rice then sits warm, the spores germinate and produce a toxin that reheating does not destroy. Fast cooling and prompt refrigeration are what make leftover rice safe.
How to store cooked rice
- Spread hot rice in a shallow container or on a tray, no more than about 2 inches deep, so it cools fast; a deep pot of rice stays warm in the middle for hours.
- Refrigerate within 2 hours of cooking, or within 1 hour in a room above 90°F (32°C). Do not leave rice in the cooker on 'off' overnight.
- Freeze rice in flat, single-meal portions in freezer bags. It reheats from frozen in the microwave with a splash of water in 2–3 minutes.
- Reheat rice until steaming hot all the way through, 165°F (74°C), and reheat only the portion you will eat rather than the whole container repeatedly.
How to tell if cooked rice has gone bad
- A sour or 'off' fermented smell when the container is opened.
- A slimy, gooey or unusually sticky film on the grains.
- Hard, dried-out, crunchy grains, which mean the rice is old and has been stored too long or uncovered.
- Any mold, or pink, yellow or green discoloration.
- Rice can carry enough Bacillus cereus toxin to make you sick while looking and smelling completely normal, so go by time, not appearance.
Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Frequently asked questions
Is rice left out overnight safe to eat?
No, throw it away. Rice left at room temperature for more than 2 hours can grow Bacillus cereus, which forms a heat-stable toxin that causes vomiting within hours of eating. Reheating, even to boiling, does not destroy that toxin, and the rice will not necessarily smell or look any different.
What is fried rice syndrome?
It is a nickname for food poisoning from Bacillus cereus, historically linked to cooked rice held at room temperature before being fried. Symptoms are sudden vomiting or diarrhea, usually passing within a day. The prevention is simple: cool rice quickly, refrigerate within 2 hours and use it within 3–4 days.
Can you freeze cooked rice?
Yes, cooked rice freezes very well and keeps best quality for about 6 months. Cool it quickly, pack it flat in freezer bags while still slightly moist, and freeze the same day it was cooked. Reheat straight from frozen until steaming hot.
Can I eat cold rice from the fridge?
Yes, as long as it was cooled and refrigerated within 2 hours of cooking and is no more than 3–4 days old. Cold rice in salads or sushi bowls is fine under those conditions. Keep it cold until you eat it rather than letting it sit out on the table.
How many times can you reheat rice?
Reheating once is the safest practice. Each warm-and-cool cycle gives surviving spores another chance to grow, so portion out only what you need, heat it to 165°F (74°C), and leave the rest in the fridge untouched.
