How Long Does Fruit Pie Last?

A baked fruit pie lasts 1–2 days covered at room temperature, then up to 1 week in the fridge, and 2–4 months in the freezer. Pies with custard, cream, or egg-based fillings are different and must always be refrigerated.

  • Mold on the filling or crust, usually first at the vents or where filling has bubbled over.
  • A fermented, wine-like or vinegary smell from the fruit.
  • Filling that has turned watery and slimy, with bubbles that were not there when it was baked.
  • A soggy bottom crust is only a texture flaw, caused by juice soaking in over time.

Does apple pie need to be refrigerated?

Not for the first 2 days. The USDA says fruit pies made with sugar can be kept at room temperature for up to 2 days, because sugar and fruit acid hold back bacterial growth. After that, refrigerate the pie for up to about a week in total. Pies sweetened with sugar substitutes should go straight into the fridge.

Which pies must be refrigerated and which can stay out?

Fruit pies can stay out for up to 2 days; anything with eggs or dairy in the filling cannot. Pumpkin, pecan, custard, chess, cream, chiffon, key lime and lemon meringue pies should all be refrigerated once cooled and not left out for more than 2 hours. Is it better to freeze a fruit pie baked or unbaked?

A supermarket bakery fruit pie keeps 1–2 days at room temperature and about a week refrigerated, the same as homemade. Boxed, shelf-stable pies with preservatives carry a printed date that may run longer; follow it while the pie is sealed, and refrigerate the pie once it has been cut.
